What is your favorite kind of fish to cook? If you answered salmon, then my spicy pineapple passion fruit glazed salmon recipe is for you. This recipe uses wild-caught Alaskan Coho salmon from Sitka Salmon Shares. Sitka specializes in delivering the freshest wild-caught Alaskan and North Pacific seafood directly to your doorstep! I recently partnered with them to create a couple of recipes using their products and was amazed by how fresh and delicious the salmon and lingcod were.

My goal with this recipe was to create something simple that allowed the flavors of the fish to shine. The sweet and spicy glazed salmon was just perfect. We will probably never eat salmon the same again. This recipe is great for simple Sunday dinner and meal preps like a champ for the workweek.  I paired this spicy salmon with roasted carrots and Brussels sprouts.

When cooking salmon it’s important that you pay attention to details. Overcooked, dry salmon is not only gross but hard to swallow (literally). Broiled salmon is possibly the easier way to prepare your glazed salmon. Given direct contact with the heat source, your salmon will cook in less than 10 minutes.

 

INGREDIENTS YOU WILL NEED TO MAKE SWEET AND SPICY GLAZED SALMON

  • Fresh, wild-caught Coho salmon from Sitka Salmon Shares
  • Fruit preserves – Get creative with your fruit preserves. Think peach, blackberry, or orange chili. These will all work well when paired with this mild fish.
  • Jalapeno pepper – adds a bit of spice to the glaze and fish.
  • Coconut Aminos – you could also use soy sauce or tamari here. We prefer the sweetness and saltiness of the coconut aminos of which are both soy and gluten-free.
  • White-Wine vinegar – adds a hint of acidity to the spicy glazed salmon
  • Garlic
  • Olive Oil
  • Water

 

HOW TO MAKE BROILED SALMON?

Broiled salmon is possibly the easier way to prepare your glazed salmon. Given direct contact with the heat source, your salmon will cook in less than 10 minutes. To make broiled salmon – Preheat broiler with oven rack 6 inches from heat. Place fillets, skin side down, on a foil-lined baking sheet. Brush with oil and sprinkle with salt and pepper. Broil to desired degree of doneness,10 -15 minutes (depending on the thickness of the fish). Remove fish from broiler and top with Spicy Pineapple Passion Fruit glaze.

HOW TO MAKE SPICY PINEAPPLE PASSION FRUIT GLAZE

Making the Spicy Pineapple Passion Fruit Glaze is super easy.

In a small saucepan combine your fruit preserves, chopped jalapeno, water, and garlic to a boil over medium heat. Cook for 10-15 minutes stirring occasionally until the sauce is reduced to by half. Add aminos (or soy sauce/tamari) and cook for another 4 to 8 minutes. The liquid should coat the back of a spoon.

*should your sauce be too watery simply mix together 1 tbs of cornstarch with 2 tbsp of warm water. slowly add the cornstarch mixture (1 teaspoon at a time) to the spicy glaze until the consistency is reached.

 

HOW TO KNOW WHEN SALMON IS DONE BAKING?

Check for doneness by taking a sharp knife to peek into the thickest part. If the meat is beginning to flake, but still has a little translucency in the middle, it is done. It should not, however, look raw. You can also look into purchasing this Auto-read thermometer to help you out. Fish should easily flake with a fork when done.

 

HOW TO REHEAT LEFTOVER COOKED SALMON?

I love chilled Salmon on top of a salad the next day. I’ve substituted chicken for salmon in my Chicken fajita salad recipe too many times to count.

Cooked salmon may be stored in the refrigerator for 1 to 2 days. You can reheat salmon on top of the stove or in the microwave. The key to reheating leftover cooked salmon is keeping the fish moist.

  • To reheat in a skillet: Let the salmon come to room temperature. Heat a nonstick skillet over medium. Once it is hot, add the salmon and a splash of water, then immediately cover it. Let the salmon steam, just until it is heated through, about 2 to 4 minutes.
  • To reheat in the microwave: Let the salmon come to room temperature. Gently warm on medium-low power, just until warmed through.

 

HOW TO FREEZE COOKED SALMON

Salmon is one of the more “freezer-friendly – types of fish.  Remove skin and freeze in an airtight container for up to two months. Let it thaw in the refrigerator overnight before preparing. We freeze salmon for those easy weeknight meals.

Ingredients

  • lb Fresh Coho Salmon
  • 1 tbsp Olive Oil
  • Salt and pepper to taste

Spicy Pineapple Passion Fruit Glaze

  • 3/4 Cups Fresh Fruit Preserves
  • 6 tbsp water
  • 1 Jalapeno pepper finely chopped. Seeds and stem discarded
  • 2 Garlic Cloves Minced
  • 1/4 Cup white-wine or cider vinegar or Mirin
  • 1 tbsp fresh lemon juice

Instructions

Spicy Pineapple Passion Fruit Glaze

  • combine preserves, water, jalapeno, and garlic in a medium saucepan. Bring to a boil over medium heat. Cook, stirring occasionally until reduced by half (10 - 15 minutes). Add Vinegar and aminos (or soy sauce) and cook until sauce is thick enough to coat the back of a spoon (5-7 minutes). Remove from heat and stir in lemon juice. set aside.

Broiled Salmon

  • Set oven to broil.
  • Place salmon on a foil-lined baking sheet. Brush with olive oil and sprinkle with salt and pepper.
  • Broil salmon skin side down until it flakes easily with a fork. Roughly 10-15 minutes depending on thickness.
  • Transfer broiled salmon onto a platter and top with warm pineapple passion fruit glaze.
