Now that the country is moving towards reopening schools this Fall, it’s time to start thinking about fun, family-friendly after school meals. Since the crispy fried chicken craze has quieted down I decided to take a stab at creating an allergy-friendly, breakfast sandwich. This spicy gluten-free fried chicken sandwich is slathered in my hot-honey vegan aioli and is topped with JUST Egg Folded, the newest product to launch from JUST Egg. It’s possibly the best breakfast sandwich ever!

Are your kiddos going back to school this Fall? The children in our area will be starting after Labor Day. All of my friends with school-aged children are excited about them reuniting with their friends, but are apprehensive about what their new daily routine will look like. Luckily, Emory will be home with us for a little while longer. That means more mommy-daughter time in the kitchen and more fried chicken breakfast sandwiches.
When I told Em what we were making she asked “can you eat fried chicken for breakfast?” We laughed so hard!! “Of course we can,” I replied. I could personally eat fried chicken for every meal of the day. As a matter of fact, one of the most popular, fast-food breakfast sandwich is chick-fil-a’s fried chicken sandwich (it’s not gluten-free like mine)!
WHAT MAKES THE BEST BREAKFAST SANDWICH?
Since giving up eggs almost two years ago I haven’t really enjoyed a breakfast sandwich. In my opinion, the best breakfast sandwich includes eggs, meat, some sort of cheese, and a delicious sauce. This spicy gluten-free fried chicken recipe checks all those boxes (minus the cheese).
My breakfast sandwich sauce tastes yummy on both eggs and fried chicken. This 4-ingredient vegan, hot-honey aioli is a mix of vegan (soy-free) mayo, honey, Louisiana hot sauce, and avocado crack seasoning! It’s spicy, sweet, and perfect.
I decided to use JUST Egg Folded in my recipe. This scrumptious new offering from JUST Egg is a frozen, pre-baked, soy-free version of their classic JUST Egg. Y’all it’s so freaking good! It’s moist, fluffy, and most importantly super easy to prepare. It’s a great stand-alone, grab-and-go breakfast option for the kids and calls for only six minutes in the toaster.
EVERYTHING YOU EVER WANTED TO KNOW ABOUT GLUTEN-FREE FRIED CHICKEN
Does fried chicken contain gluten? Yes. Standard fried chicken recipes usually include all-purpose flour which does contain gluten. Making gluten-free fried chicken is super simple though. It’s really all about making the appropriate egg and flour substitutions.
What gluten-free flour is best for frying? I like to use Brown rice flour for frying. In addition to being a great binder, it provides more flavor, tastes better, and makes food extra crispy! Cornstarch is a great substitute for flour. I like to mix the two together.
How do you bread chicken without eggs or dairy? I use Bob’s Red Mill flax eggs (vegan egg) when coating both chicken and fried fish.
What is the secret to crispy fried chicken? To achieve extra crispy fried chicken follow the “triple-dip method,” prior to adding your meat to the oil.
- Dip your meat in the gluten-free flour first
- Then dip into the flax egg
- Lastly, dip once more into the flour before dropping into the frying oil.
How long do you pan fry chicken breast pieces? When making fried chicken sandwiches it’s best to use thin-cut chicken breasts. They fry much quicker than the traditional thick-cut breasts. Fry thin chicken breasts for 1-2 minutes each side, turning for 10 minutes or until internal temperature reaches 165 °.
SPICY GLUTEN-FREE FRIED CHICKEN BREAKFAST SANDWICH & HOT-HONEY AIOLI |RECIPE
To make this fried chicken breakfast sandwich you will need three main ingredients and some spices from your pantry.
Brown Rice Flour is the best gluten-flour for frying in my opinion. When combined with gluten-free cornstarch the outcome is delicious, golden-brown, crispy fried chicken. The kind of fried chicken that makes noise when you bite into it!!
For the Hot-Honey breakfast sandwich sauce you will need:

Although I am referring to this as a breakfast sandwich, this spicy gluten-free fried chicken sandwich is perfect for lunch and dinner. The use of JUST Egg Folded is what makes this version a morning meal option.

Spicy Gluten-Free Fried Chicken (Breakfast) Sandwich
Ingredients
- 3 Thin-cut Organic Chicken Breast Sliced breasts in half, horizontally
Gluten-Free Fried Chicken Batter
- 1 cup Brown Rice Flour
- 1/2 cup Gluten-Free Corn Starch (or corn flour)
- 1 T Paprika
- 1 T Garlic Powder
- 1 T Onion Powder
- 1 T Cayenne Pepper
- 1 t Salt
- 1 t Pepper
Vegan Hot-Honey Breakfast Sandwich Sauce
- 1/4 C Vegan Mayo
- 2 T Hot Sauce
- 1 T Paprika or Taco Seasoning I use Avocado Crack Seasoning
- 1/2 t Garlic Powder
- 3 T Flax Egg
- 4.5 oz Water 9 TBS (3T of water per 1T Flax Egg)
Instructions
Vegan Egg Replacer
- Add 3 tablespoons of flax egg and 4.5 oz of water to a bowl, mix and set aside. Allow mixture to thicken for 5 minutes.
Triple-Dip Method for Coating Chicken Breast
- Add Brown rice flour, corn starch, and spices to a bowl. Once the vegan egg replacer has reached egg-like consistency, follow the triple-dip method to evenly coat your chicken breast.
- FIRST - Dip chicken breast into the gluten-free flour mixture
- SECOND - Dip Chicken into vegan egg replacer
- THIRD - Dip Chicken back into Gluten-Free Flour Mixture
- Add chicken to hot frying oil and fry pieces for 10 minutes, flipping chicken every 2-3 minutes to ensure even frying.
- Once complete, allow chicken to rest on a wire rack.
