Simple Rotisserie Chicken Salad with Organic Red Grapes

INGREDIENTS
2 cups Whole Foods Organic Seedless Red Grapes
4 stalks Celery
1 tsp Fresh Thyme
A Handful of Fresh Parsley
½ Rotisserie Chicken
¼ cup FAGE YOGURT GREEK TOTAL 0% PLAIN 17.6 OZ PACK OF 3
¼ cup 365 Everyday Value Organic Mayonnaise
1 tbsp 365 Everyday Value Organic Shoyu Soy Sauce – Reduced Sodium
365 Everyday Value Black Pepper – Ground
¼ cup Wonderful No Shell Pistachios (24 oz.)

Lettuce, of your choosing
INSTRUCTIONS
Prep: Grab a large cutting board. Wash your Celery, Herbs and Grapes
- Chop fruit and vegetables into bite size pieces; roughly chop the Parsley and Thyme. Set this produce aside in a large bowl with the roughly chopped Pistachios.
- Pull, chop, shred, the Chicken from its bones — use your hands. Oh, and lose the skin. That’s gross.
- Add the chicken, yogurt, mayonnaise, soy sauce, and black pepper, extra if needed. Mix thoroughly. If things look too dry, add another squirt of Mayo or dollop of Yogurt.
- Park it in the fridge overnight in individual portions, and bring your bread and fixin’s separately.
